Fort Flavours – A Sumptuous Culinary Infusion at Fort Siloso
Sentosa dishes out an exclusive and delectable eight-course dinner at Singapore’s only preserved coastal fortification as part of Singapore Food Festival 2007 A tantalizing gastronomic delight awaits you at Fort Siloso as part of this year’s Singapore Food Festival, the annual gastronomic event that showcases gourmet cuisine and authentic local flavours. Sentosa’s exclusive two-day only culinary presentation for foodies and history enthusiasts is called Fort Flavours, and will support the Singapore Tourism Board’s efforts to add flair and colour to the festivities. With the Fort Flavours dining experience on Sentosa, guests can indulge in a delectable 8-course selection of ‘old and new world’ gourmet cuisine within Fort Siloso, Singapore's only preserved coastal fortification that will provide an authentic setting where key historical events actually happened. This culinary expedition will feature a sumptuous fare prepared by a father and son team – Sentosa’s Executive Chef, Kenny Yeo who honed his skills at Le Centenaire in France, a Michelin 3-Star hotel and some of Singapore’s best restaurants, and his father Yeo Quee Ann, a veteran Hainanese chef whose specialty is authentic local cuisine and a variety of local colonial fare. “Sentosa is delighted to be part of the Singapore Food Festival. We have created different elements of Fort Flavours in a manner to make it an intimate evening to introduce the guests to fine cuisine that will invigorate their senses, and captivating scenery that cannot be duplicated. And the authentic setting of Fort Siloso will add an absolutely unique ambience”, said Frank Yuen, Sentosa’s Director of Food and Beverage. The Fort Flavours journey begins on board the Fort Tram as it takes guests back in time where character hosts will provide guests with bite-sized vignettes about Fort Siloso. Guests then savour cocktails and appetisers after exploring the longest tunnel featuring life-size displays, a battery of guns and, stunning views of the setting sun over the South China Sea. Guests soak in the mystery of the past as the voyage takes them on to the Fort Square, where the main course will be served. As they tantalise their palates, Sentosa’s chefs will spice up the experience with some culinary insights.
Guests will have a fresh and engaging look at an era gone by and 120 years of coastal defence fortification built by the British in the 1880s. The Fort Siloso – spread over 4-hectares of land on and around a hillock, makes it a more accessible, engaging and exclusive dining experience for guests. All these ingredients make for a truly delicious evening at Fort Flavours! As an avid food traveller, Kenny Yeo’s love for cultures and foods has led him cross borders and seas to Europe and Asia in search for authentic and the exotic flavors from different regions. His culinary journey began at the age of seven as a kitchen helper to his chef father. However, it was only when he turned 14 that his passion for food really ignited. Having honed his skills at Le Centenaire in France, a Michelin 3-Star hotel and some of Singapore’s best restaurants, Kenny has developed his appreciation of fine dining, particularly French cuisine. With over 20 years of experience, the aficionado in French fare has helmed kitchens of renowned restaurants including Petite Village Café Bistro and Restaurant by JQ Concepts Pte Ltd in Taipei and Centro Concept (Restaurant 360). Many celebrities and dignitaries have savored and enjoyed Kenny’s luscious yet light fine cuisine. A perfectionist at heart, he seeks the premier selections of the season, reserving nothing but the finest for his guests.
